Ingredients

170 grams plain greek yogurt
255 grams sugar
15 drops lemon extract
1 lemon
3 eggs
340 grams flour
2 teaspoons baking powder
170 grams ground almonds
170 grams sunflower oil

Directions

1Preheat the oven to 180 degrees Celsius.
2Line a round cake pan with parchment paper.
3In a bowl, pour in the yogurt, sugar, lemon extract, lemon zest, and eggs. Mix well.
4Then add in the flour, baking powder, and ground almonds.
5Mix only until the ingredients start to come together.
6Add the oil and mix again.
7Pour into the cake pan and bake for 25 minutes, or until a toothpick inserted into the center comes out clean.
