  • 1 cup butter (or margarine)
  • 3/4 cup sugar
  • 1/2 teaspoon vanilla extract
  • 3 eggs
  • 1 cup ground almonds
  • 2 1/4 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 cup Amaretti Cookies (coarsely chopped)
  • 5 tablespoons milk
  • 13 1/2 ounces cherries (in syrup, drained)
  • 3/4 cup powdered sugar
  • 1/2 lemon (juiced)
  • 1/2 teaspoon red food coloring
  • chocolate (hearts, for decoration)

Directions

  1. Preheat oven to 400°F. Grease and flour a 9 x 5 inch loaf pan. Cream butter, sugar and vanilla extract until light and fluffy. Add eggs, 1 by 1, then add almonds, flour, baking powder and crushed cookies, alternating with milk. Fold cherries into batter then transfer to prepared pan. Bake for about 1 hour. Remove from oven and allow to cool on a wire rack for about 10 mins. Meanwhile, mix powdered sugar with lemon juice and food coloring. Remove cake from pan and spread pink icing over top. Decorate with chocolate hearts.
