Almonds and cherries are two flavors that go together perfectly. These muffins feature both, plus a sweet icing, for a delicious treat. These muffins are easy to make and are a great project for a weekend afternoon. This recipe is very simple to prepare and bake, so it makes for a perfect task for little hands to help with.

Ingredients

  • 125 grams butter (soft)
  • 100 grams brown sugar
  • 2 eggs
  • 60 grams flour
  • 60 grams almonds
  • 100 grams Amarena cherries
  • icing sugar

Directions

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Whisk the softened butter with the sugar. Add the eggs one by one and then the flour and sieved almond powder. Finally, add the cherries and mix gently with a spatula. Pour the mixture into a muffin pan and bake for about 20 minutes.
  3. For the decoration, mix the icing sugar with a little water in order to obtain a slightly flowing paste. You can add food coloring to the mixture. Spread the mixture over the cooled cupcakes.

These are delicious muffins and they are also so pretty. Mine took a little less time to bake, so check on them before the 20 minutes are up.
