Flaky pastry meets a gooey almond filling with a slight crust on the top in this amazing almond pie. Make your own puff pastry or purchase it premade, you choose. Made with brown sugar, this pie has a rich caramel flavor that complements the crunch of almonds perfectly.

Ingredients

  • 1 puff pastry (round base)
  • 200 grams almonds (unpeeled)
  • 4 eggs
  • 100 grams margarine
  • 150 grams brown sugar
  • 2 tablespoons milk
  • powdered sugar (for dusting)

Directions

  1. Preheat oven to 180 degrees Celsius.
  2. Spread the puff pastry in a round pie pan.
  3. Mince the almonds in the food processor briefly, for larger pieces. Do not grind to dust.
  4. Add the eggs, margarine, sugar, and milk. Mix until you get an uniform dough.
  5. Place mixture in pie crust, and bake for about 30 minutes until it browns. It's ready as soon as it starts cracking.
  6. Remove from oven, let cool, and sprinkle with powdered sugar.

I loved, loved, loved this almond pie recipe! If I wasn't worried about gaining the weight, I'd be making and eating one every week lol. Super tasty. Will be adding it to my recipe book.
