Description

Wintertime means fresh citrus. Made with almond flour, these gluten free cupcakes make a great wintertime treat. Combining the flavors of fresh orange juice and zest with the nutty flavor of almond into the cupcake batter, each cupcake is topped with an orange glaze after baking. If you do not have a cupcake pan, you can also make this into a sheet cake using a square or rectangular cake pan.

Ingredients

  • 100 grams butter (room temperature)
  • 200 grams sugar
  • 3 eggs
  • 120 grams almond flour
  • 1 orange (zested and juiced)
  • 120 grams corn starch
  • 8 grams baking powder
  • 150 grams powdered sugar
  • 1/2 orange

Directions

  1. Preheat the oven to 160 degrees Celsius.
  2. In a bowl, cream together the butter and sugar.
  3. Beat in the eggs 1 by 1 then mix in the almond flour, orange zest, and orange juice.
  4. Sift in the cornstarch mixed with the baking powder and beat until just combined.
  5. Pour the batter into pre-greased cupcake pans.
  6. Bake for 10 minutes or until golden.
  7. Once the cupcakes are cool, glaze them.
  8. To make the glaze, mix the powdered sugar with just a few drops of orange juice at a time until you get the consistency of condensed milk.
