Almond-Oat Shortbread Cookies

This recipe for Almond-Oat Shortbread Cookies is perfect for any special occasion or holiday pot luck luncheon. Ingredients
- 200 grams flour
- 70 grams oats
- 100 grams chopped almonds
- 120 grams brown sugar
- 1 teaspoon baking soda
- 2 teaspoons ground cinnamon
- 130 grams butter
Directions
- 1In a medium bowl, combine flour, oats, almonds, sugar, baking soda, and cinnamon.
- 2Add butter and mix with a pastry cutter to get the a crumbed texture.
- 3Add just a little water to bind the dough.
- 4Form a ball, cover with a cloth and let rest for 1 hour.
- 5Preheat the oven to 150 degrees Celsius.
- 6Form the cookies by hand to the prefered size.
- 7Arrange them on a baking sheet lined with parchment paper and bake for about 30 minutes.
- 8Remove from the oven and let cool.
