After just 15 minutes of simmer time, this hearty, crowd-pleasing sauce is ready to ladle atop your favorite pasta, whether it's spaghetti, mostaccioli or fusilli. Just remember to pass the Parmesan cheese. To make things easy on yourself, the sauce can be made up to three days in advance or frozen in an airtight container for up to six months.

Ingredients

  • 150 grams flour
  • 50 grams strong flour
  • 100 grams sugar
  • salt
  • 7 grams baking powder
  • 70 grams melted butter (cooled)
  • 250 milliliters buttermilk
  • 1 medium egg
  • 1/2 teaspoon almond extract
  • 100 grams chocolate chips

Directions

  1. Preheat the oven to 190C.
  2. In a bowl, combine the two types of flour, sugar, a pinch of salt, baking powder, and chocolate chips. In another bowl, combine the melted butter, buttermilk, egg, and the almond extract.
  3. Add the two mixtures together and mix briefly.
  4. Fill the muffin liners to 2/3 and bake for approximately 20 to 25 minutes, until a toothpick inserted in the center comes out clean.
  5. Remove the muffins from the oven and serve.

The muffins were moist. The chocolate chips added a hint of sweetness. I used almond extract but I also threw in some chopped up almonds for some crunch and enhanced nutty flavor. They were delicious.
