Ingredients

  • 250 grams butter
  • 200 grams sugar
  • 1 egg yolk (small)
  • 250 grams all purpose flour
  • 250 grams almond flour
  • 1 teaspoon vanilla extract
  • salt
  • dark chocolate (Melted)

Directions

  1. Combine the butter with the sugar, add the egg yolk, vanilla extract, and a pinch of salt.
  2. Knead quickly while adding the two types of flour.
  3. Refrigerate the dough for at least 6 hours.
  4. Shape into small balls, flatten them slightly, and place them on a baking sheet leaving some space between each cookie.
  5. Refrigerate the cookies for 1 hour.
  6. Bake at 140C for approximately 20 to 25 minutes.
  7. Remove the cookies from the oven, let them cool, add some melted dark chocolate to the bottom of one cookie and pair it with another cookie. Repeat this step will all the cookies.

Regular flour is combined with Almond flour in a kneaded cookie dough. Melted chocolate between the two layers makes this a decadent treat. The chocolate should be allowed to cool a bit on the bottom layer before the top cookie is put into place so that it can solidify a bit.
