Description

French almond cream — crème d'amandes or frangipane — is a cream made of almonds, eggs and sugar. It's used as a filling for tarts and cakes. In this version, ground almonds are turned into nut-flour, which mixes with cocoa and melted butter atop the stove. Eggs are carefully added into the mix. After 15 minutes over low heat, the cream is refrigerated until thickened and ready to serve with your favorite pastries.

Ingredients

  • 130 grams almonds (toasted and finely ground)
  • 300 grams sugar
  • 110 grams butter
  • 4 eggs
  • 50 grams cocoa (bittersweet)

Directions

  1. 1Grind the almonds and the sugar in the food processor into a flour.
  2. 2Melt the butter over very low heat with the chocolate and add to the almond and sugar mixture.
  3. 3Add the eggs, one at a time.
  4. 4Place the mixture on the stove and cook for approximately 10 to 15 minutes on very low heat, stirring often.
  5. 5Refrigerate the cream (at first it will seem quite “liquid”, but then it will thicken).
  6. 6Serve.
