This recipe for almond cookies makes for a healthier dessert to bring to the office holiday party. Almonds give a decent amount of healthy fat and protein to any dish, so grinding these up and adding them to the mix is a smart move. A bit of brown sugar and cinnamon speak volumes in the delicious flavor of these treats. Add a pinch of nutmeg for a taste of Christmas spirit.

Ingredients

  • 2 egg whites
  • 200 grams brown sugar
  • 225 grams ground almonds
  • 25 grams flour
  • 1/2 teaspoon cinnamon
  • almond flakes

Directions

  1. Preheat oven to 180 degrees Celsius.
  2. Beat the egg whites until stiff, add the sugar, ground almonds, flour, and cinnamon. Mix well.
  3. Spoon dough onto baking tray lined with parchment paper, and sprinkle almond flakes on top of each piece. Flatten each piece with a fork.
  4. The portions should be slightly separated because the dough will expand during baking.
  5. Bake for 20 minutes.

These almond cookies are very crunchy with all the almonds jam packed into them. The cookies themselves are mildly hard but nothing extreme. I will be making these almond cookies again soon, its nothing shy of a 5 star recipe.
