Description

Chocolate and almonds are a classic pairing, especially in Italian baking. Here, the two are combined in simple yet delicious drop cookies. For deeper chocolate taste, the dough calls for both melted bittersweet chocolate (which also imparts moistness) as well as cocoa powder. Use a small ice-cream scoop to make uniform balls of dough. The cookies will keep at room temperature for up to a week in an airtight container.

Ingredients

150 grams bittersweet chocolate chips
100 grams flour
30 grams cocoa
1 eggs
60 grams sugar
90 grams butter
salt
vanilla extract
100 grams almonds

Directions

1Preheat the oven to 180 degrees Celsius.
2Melt the chocolate chips over a double boiler.
3Place the flour and the cocoa on a work surface (or in a bowl), place the egg, sugar, butter, a pinch of salt, and a couple of drops of vanilla in the center.
4Combine the ingredients well into a dough with a uniform consistency.
5Add the chocolate and the almonds.
6Use a spoon to scoop out small round shapes (the shapes will be irregular) and place the cookies on a baking sheet which has been buttered and floured or lined with parchment paper.
7Bake for 13 to 15 minutes.
