Chocolate and almonds are a classic pairing, especially in Italian baking. Here, the two are combined in simple yet delicious drop cookies. For deeper chocolate taste, the dough calls for both melted bittersweet chocolate (which also imparts moistness) as well as cocoa powder. Use a small ice-cream scoop to make uniform balls of dough. The cookies will keep at room temperature for up to a week in an airtight container.

Ingredients

  • 150 grams bittersweet chocolate chips
  • 100 grams flour
  • 30 grams cocoa
  • 1 egg
  • 60 grams sugar
  • 90 grams butter
  • salt
  • vanilla extract
  • 100 grams almonds

Directions

  1. Preheat the oven to 180 degrees Celsius.
  2. Melt the chocolate chips over a double boiler.
  3. Place the flour and the cocoa on a work surface (or in a bowl), place the egg, sugar, butter, a pinch of salt, and a couple of drops of vanilla in the center.
  4. Combine the ingredients well into a dough with a uniform consistency.
  5. Add the chocolate and the almonds.
  6. Use a spoon to scoop out small round shapes (the shapes will be irregular) and place the cookies on a baking sheet which has been buttered and floured or lined with parchment paper.
  7. Bake for 13 to 15 minutes.

I really love the combination of chocolate and almond; incorporating that into a cookie was just pure genius. They taste amazing and if you bake the cookies for a few minutes less than recommended they will be extra soft and chewy. Another great recipe that I will make more often and rate it at 4 stars.
