This Swedish almond cake is a great recipe to master and have on hand for dessert related emergencies. In this unique recipe, the cake is topped with icing and then placed back in the oven so it soaks into the cake for a super sweet and crisp topping. Add a scoop of vanilla ice cream or a dallop of lightly sweetened whipped cream on top for the perfect bite every time.

Ingredients

  • 150 grams sugar
  • 3 eggs
  • 150 grams flour
  • 1 1/2 teaspoons baking powder
  • 75 grams butter (melted)
  • 3 tablespoons milk
  • 2 teaspoons vanilla extract
  • 50 grams butter
  • 50 grams sugar
  • 1 teaspoon vanilla extract
  • 3 tablespoons cream
  • 100 grams almonds
  • 2 teaspoons flour

Directions

  1. Preheat oven to 180 degrees Celsius
  2. In the mixer, beat the sugar with the eggs, until you obtain a soft cream.
  3. Add the sifted flour and baking powder. Mix, without beating.
  4. Add the melted butter, milk, and vanilla. Mix carefully.
  5. Pour into a buttered and floured cake pan.
  6. Bake for 30 minutes.
  7. In a frying pan, add the butter, sugar, vanilla, and cream. Melt the butter until the sugar starts to turn to golden brown.
  8. Add the almonds, and flour.
  9. Remove the cake from the oven, and spread the icing evenly on top.
  10. Put the cake back in the oven for about 15 minutes.

The thing that is indecent about this cake is my desire to eat the whole thing! It is rich, sweet and moist! I made two of them and took our new neighbor. We enjoyed talking “cake!” This indecent desert needs no garnish just nice cup of coffee!
