Description

This Swedish almond cake is a great recipe to master and have on hand for dessert related emergencies. In this unique recipe, the cake is topped with icing and then placed back in the oven so it soaks into the cake for a super sweet and crisp topping. Add a scoop of vanilla ice cream or a dallop of lightly sweetened whipped cream on top for the perfect bite every time.

Ingredients

150 grams sugar
3 eggs
150 grams flour
1 1/2 teaspoons baking powder
75 grams butter (melted)
3 tablespoons milk
2 teaspoons vanilla extract
50 grams butter
50 grams sugar
1 teaspoon vanilla extract
3 tablespoons cream
100 grams almonds
2 teaspoons flour

Directions

1Preheat oven to 180 degrees Celsius
2In the mixer, beat the sugar with the eggs, until you obtain a soft cream.
3Add the sifted flour and baking powder. Mix, without beating.
4Add the melted butter, milk, and vanilla. Mix carefully.
5Pour into a buttered and floured cake pan.
6Bake for 30 minutes.
7In a frying pan, add the butter, sugar, vanilla, and cream. Melt the butter until the sugar starts to turn to golden brown.
8Add the almonds, and flour.
9Remove the cake from the oven, and spread the icing evenly on top.
10Put the cake back in the oven for about 15 minutes.
