Ingredients

2 lime
8 medium eggs
ground cinnamon
salt
200 grams sugar
200 grams cake flour
butter

Directions

1Preheat the oven to 160 degrees Celsius.
2Grate the lime zest.
3Separate the egg whites and yolks.
4Mix the lime zest and yolks. Add a pinch of cinnamon.
5Whip the egg whites adding a pinch of salt. Once they resemble foam, add the sugar slowly and continue beating to obtain a soft meringue.
6Fold the egg yolks into the meringue.
7Sift the flour over the mixture and fold in.
8Place the batter in a pastry bag with a large tip.
9Create the flat cakes onto greased parchment paper.
10Sprinkle with sugar and cinnamon, if desired.
11Bake for 10 to 15 minutes, or until the borders are golden brown.
12Place in a cooling rack and serve.
