Ingredients

  • 1 pound top sirloin steak (Beef Loin, sliced fajita style)
  • 1 sweet pepper (green, cut in squares)
  • 1 jalapeno (chopped, remove seeds and veins if too hot for you)
  • 1 onion (small, sliced)
  • 4 strips bacon (chopped)
  • 2 tomatoes (thinly sliced)
  • 1 cup manchego (or shredded Oaxaca, or Mozzarella or Pepper Jack cheese)
  • 1 lemon (juiced, to taste)
  • salt

Directions

  1. In a large pan place the bacon and fry until edges have browned. Remove from pan.
  2. In the bacon fat sautee the onions for five minutes. Add the jalapeno and the sweet pepper and sautee for two more minutes. Add the tomato and sautee until withered, about two minutes.
  3. Add the meat and return bacon to the pan. Season with salt and pepper, add the lemon juice.
  4. Stir until meat is thoroughly cooked.
  5. Add the cheese on top and let it melt. Turn the heat off and enjoy as taco stuffing or main dish.

Excellent! I had this at a restaurant and had to try it at home! Simple and delicious served with warm tortillas, rice and beans!
