Description

There's no real mystery behind the batter — just flour, baking powder, salt, sugar and milk — so the recipe holds appeal for novices and expert bakers alike. If you want to up the ante a bit, try melting some chocolate in a double boiler with a touch of heavy cream and use it to frost the muffins before serving.

Ingredients

220 grams flour
1 teaspoon baking powder
salt
100 grams sugar
100 milliliters milk
20 milliliters mint syrup
2 tablespoons peanut oil
2 eggs
80 grams softened butter
100 grams chocolate chips

Directions

1Preheat the oven to 175C.
2Combine the flour, the baking powder, a pinch of salt, and the sugar in one bowl and the milk, the mint syrup. the oil, and the eggs in another.
3Mix the dry ingredients with the wet ingredients, then add the softened butter and the chocolate chips.
4Fill the muffin liners and bake the muffins for 20 to 25 minutes.
5If you would like to add chocolate icing: melt dark chocolate over a double boiler and ice the top of the muffins.
