There's no real mystery behind the batter — just flour, baking powder, salt, sugar and milk — so the recipe holds appeal for novices and expert bakers alike. If you want to up the ante a bit, try melting some chocolate in a double boiler with a touch of heavy cream and use it to frost the muffins before serving.

- Preheat the oven to 175C.
- Combine the flour, the baking powder, a pinch of salt, and the sugar in one bowl and the milk, the mint syrup. the oil, and the eggs in another.
- Mix the dry ingredients with the wet ingredients, then add the softened butter and the chocolate chips.
- Fill the muffin liners and bake the muffins for 20 to 25 minutes.
- If you would like to add chocolate icing: melt dark chocolate over a double boiler and ice the top of the muffins.
