Yum! These After Eight Chocolate Cookies are so good! We call them the After Eight Chocolate Cookies for two reasons: (1) they are the perfect late night snack to help your sweet tooth, & (2) because after eating eight of them in a row you will feel so full and satisfied you will fall right to sleep. Try our After Eight Chocolate Cookies and let us know your thoughts! Too good not to try!

Ingredients

  • 100 grams plain chocolate (chopped)
  • 1 tablespoon butter
  • 180 grams flour
  • 130 grams sugar (peppermint)
  • 2 tablespoons cocoa powder
  • 4 grams baking powder
  • salt
  • 2 eggs
  • 2 tablespoons peppermint syrup

Directions

  1. In a pan, melt the chocolate with the butter and allow to cool. Set aside.
  2. In another bowl, mix the flour with the sugar, cocoa powder, baking powder, and a pinch of salt.
  3. Add the eggs, syrup and chocolate mixture to the flour mixture.
  4. Mix all the ingredients together, form into a smooth dough ball and wrap in plastic wrap and allow to rest in the refrigerator for 2 hours.
  5. Preheat the oven to 180 degrees Celsius.
  6. Shape into small balls place on a parchment paper-lined baking sheet.
  7. Bake for 10 minutes.
  8. Leave to cool completely before removing from the pan to avoiding breaking apart.

These cookies are best served as a treat for a dinner party or after work when you have had a bad day. They just feel like a treat that must be savored. I will make them again for sure.
