This spiced cinnamon and chocolate chip cookie dough is cooked in a pie pan for attractive slices that can be served warm with ice cream or whipped cream for a delicious treat. Using only brown sugar for sweetness, each slice of this cinnamon and chocolate chip cookie pie has a warm caramel flavor. Bake time for this cookie pie is 25 minutes. You want the outside to be firm to the touch, but the inside should still be a little on the melty side.

Ingredients

  • 120 grams butter (room temperature)
  • 160 grams brown sugar
  • 1 egg
  • 160 grams flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 150 grams chocolate (chunked or in chips)

Directions

  1. Preheat the oven to 180 degrees Celsius.
  2. Line a pie pan with about 20 centimeters of parchment paper.
  3. Cream the butter and brown sugar together. Add the egg and continue beating until well combined.
  4. Then add the flour, baking powder, cinnamon, and chocolate. Mix quickly making sure not to overmix.
  5. Pour the batter out into the pie pan and bake 25 minutes until the top is firm and golden but the inside is tender.
  6. This is nice topped with heavy cream or vanilla ice cream.
