  • 2 bunches kale (4-8 cups sliced)
  • 1 onion (large, chopped)
  • 2 garlic cloves (minced or pressed)
  • 2 cups crushed pineapple in juice (undrained canned, 20-ounce can)
  • 15 ounces chickpeas (rinsed and drained, optional)
  • 1/2 cup peanut butter (or 1/3 cup peanut butter powder and 1/3 cup water)
  • 1 tablespoon Tabasco Pepper Sauce (I actually use about 3 tablespoons of a favorite Louisiana hot sauce that isn’t as spicy as Tabasco)
  • 1/4 cup chopped parsley
  • salt (to taste)
  • peanuts (crushed skinless, optional)
  • scallions (chopped)

Excellent excellent excellent. I am obsessed with this, I think it is so delicious. I serve it over long grain brown rice. I don't add parsley (hate) or scallions, but I do try to add the crushed peanuts when I have them, it's a nice texture thing.
