  • 3 pounds chicken legs (thighs and/or wings)
  • 3 tablespoons vegetable oil
  • 1 white onion (or large yellow, sliced)
  • 3 inches ginger (piece of, peeled and minced)
  • 8 garlic cloves (chopped roughly)
  • 3 pounds sweet potatoes (peeled and cut into chunks)
  • 15 ounces crushed tomatoes
  • 1 quart chicken stock
  • 1 cup peanut butter
  • 1 cup roasted peanuts
  • 1 tablespoon ground coriander
  • 1 teaspoon cayenne (or to taste)
  • salt
  • black pepper
  • 1/2 cup chopped cilantro

It was okay, but I wouldn't make it again. The stew just felt like I was eating chicken covered in peanut butter. It wasn't overly flavoursome and just got awfully thicker as the days passed.

Turned out great. Definitely on my list to make again. Easy to adjust based on the amount of spice you like
