  • 3 potatoes (large, Yukon Gold preferable for thin skin)

  • 2 green pepper (large)
  • 6 ounces coconut milk
  • 1 pound greek yogurt (full fat)
  • 200 grams tomatoes (strained)
  • 8 garlic cloves
  • 1 bunch fresh cilantro
  • 4 inches ginger (peeled)
  • 6 tablespoons palm oil (virgin red)
  • 1 pinch saffron
  • 1/2 lemon (juice of, optional)
  • 1 tablespoon coriander seeds
  • 1 1/2 tablespoons cumin seed
  • 1 teaspoon fennel seeds
  • 1 teaspoon fenugreek seeds
  • 1 teaspoon mustard seeds
  • 1 teaspoon clove
  • 1 whole nutmeg
  • 1 teaspoon allspice
  • 12 green cardamom pods
  • 1 teaspoon black peppercorns
  • 1 teaspoon kosher salt
  • 1 teaspoon ground turmeric
  • 10 bell pepper (hot indian dried, more or less depending on how hot they are and how hot you like)
  • 2 bay leaves
  • 5 curry leaves (dried, optional)
