A tasty marinade, make this Mexican inspired Adobo Sauce to marinate your chicken, beef, or pork. Incorporating the flavors of ancho and pasilla chile peppers with roasted onion and garlic, this Adobo Sauce is spiced with a myriad of spices such as cinnamon, cloves, cumin, and allspice. Flavorful and savory with just the right amount of heat, this Adobo Sauce makes a particularly great marinade to season shredded to meat to use in tacos or for baked chicken.

Ingredients

  • 5 Ancho chilies (seeded and soaked in hot water)
  • 2 chilies (Pasilla, seeded and soaked in hot water)
  • 4 cloves garlic (roasted)
  • 1/2 onion (roasted)
  • 5 allspice (grains)
  • 1 clove
  • 1 pinch cumin
  • 1 cinnamon stick
  • 1 cup white vinegar
  • 1 pinch salt
  • 1 pinch sugar

Directions

  1. Place all the ingredients in the blender. Puree until smooth.
  2. Use to marinate meat.

I love adobo sauce and when I saw this new recipe, I had to give it a try. It was wonderful and I'm going to make more to have on hand.
