  • 2 cups rotisserie chicken (shredded)
  • 1 1/2 cups mayonnaise
  • 1/2 cup corn (Sweet Sauteed if you feel like making it, or just use canned - don't hate me!)
  • 3 tablespoons chopped cilantro
  • 1 tablespoon adobo sauce
  • 1 tablespoon lime juice
  • 1 pinch salt
  • 1 pinch pepper
  • buns (cheddar)
  • spinach leaves

Directions

  1. Combine first 8 ingredients in a large bowl until well combined. Spread onto the cheddar buns that you've lined with spinach leaves. Enjoy!
