A scrumptious half and half loaf cake, half of the batter is mixed with cocoa powder to create a contrast not only flavor but also in appearance. Easily made in one bowl, this cake batter is quick to make and then you can relax a bit while you pop the cake into the oven for 50 minutes. A simple recipe, this cake lends itself to adjustment and experimentation according to personal preference.

Ingredients

  • 250 grams sugar
  • 3 eggs
  • 250 grams plain yogurt (or banana-flavored yogurt)
  • 375 grams flour
  • 125 grams sunflower oil
  • 16 grams baking powder
  • vanilla extract
  • salt
  • cocoa powder

Directions

  1. Preheat the oven to 180 degrees Celsius.
  2. In a bowl, beat the sugar and eggs until frothy. Slowly add the yogurt, flour, sunflower oil, baking powder, a few drops of vanilla and a pinch of salt. Mix well.
  3. Pour 1/3 of the batter into a baking mold.
  4. Mix the remaining 2/3 of the batter with cocoa powder to taste. Pour into the baking mold.
  5. Bake for 50 minutes.
  6. Let it cool and serve.

Use yogurt just as the recipe calls for. I have used sour cream in baking before, but now I love using yogurt. It keeps the cake light and moist. Don't change the sunflower oil either. It is a healthy oil that is good for you and delicious. If you try to use olive oil when you bake, it changes the flavor of the baked goods.
