  • 2 tablespoons buttermilk (or regular milk)
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon allspice
  • 1/4 teaspoon grated nutmeg (freshly)
  • 1/2 cup whole wheat pastry flour
  • 1/4 cup oat flour
  • 1/4 cup buckwheat flour
  • 1/4 cup millet flour
  • 1/4 cup barley flour
  • 1/4 cup rye flour
  • 1/4 cup flour (amaranth)
  • 1 cup chocolate chips (plus a few extra for popping on top of the batter before baking)
