  • 1 1/2 pounds boneless, skinless chicken thighs
  • 1 teaspoon salt (for chicken)
  • 4 teaspoons cornstarch
  • 5 tablespoons distilled white vinegar
  • 3 tablespoons sugar
  • 1/4 teaspoon salt (for sauce)
  • 1 tablespoon orange zest (1-2 oranges for 1 Tbsp. zest)
  • 3 tablespoons orange juice (1 orange for 3 Tbsp. juice)
  • 3 green onions
  • 2 tablespoons vegetable oil

    Directions

    1. Cut chicken into 1-inch pieces. Combine chicken, salt, and cornstarch in a medium bowl and set aside while you prepare other ingredients.
    2. Combine vinegar, sugar, and salt in a small bowl. Zest and juice the orange, and combine in a small bowl. Thinly slice green onions on a diagonal and set aside for serving.
    3. Heat a dry, large, heavy-bottomed saute pan over medium-high heat. Once hot, add the oil, swirling to coat bottom. Add chicken and spread pieces to a single layer. Cook until well-browned on underside, 2-3 minutes. Turn pieces over and cook until browned on second side, 2-3 minutes. Transfer chicken to a bowl.
    4. Reduce heat to medium and add vinegar-sugar mixture to pan. Bring to a boil, stirring; then cook until thickened slightly, about 30 seconds. Add zest and juice and return chicken to pan; cook, stirring, until sauce thickens and coats chicken.
    5. Sprinkle chicken with reserved green onions and serve immediately.
