My first attempt at zucchini fritters and I won't be looking any further for a recipe. This one is perfect. They keep pretty well in the fridge for a day or two too.

Loved these! Used a food processor to shred. I dusted them with panco breading to make them extra crispy.

Turned out a little on the brittle side with one of mine falling apart in the pan. This can also be made with carrots, other types of squash, cucumber (if you are into cooked cucumber) and many more vegetables. Overall, I would say it is half decent with the cleanup taking about 5 minutes and overall taking about 30 mins (grater broke so I had to use vegetable peeler to slice zuchini). It is a staple of my breakfast menu now.

The recipe itself was fool proof and made beautiful fritters but my zucchinis were tasteless with tough skin so it killed the dish. Be ware of large zucchinis from the garden. Yuck!

Was very good, although the zucchini adds a lot of moisture I had to add 1/3 cup of milk to blend the egg and flour.

love these! they are a new staple for my family. I like that you can make them a big or small as you want. Basically you can choose to have them super crispy or more fritter....y. I used fresh zuchini from my garden once and they were OUT OF THIS WORLD!

I found them to be mostly bland. I think a few more herbs and spices will pep this dish up. It's a good starting point. I"ll keep it.
