Delicious! Put the sweet potato in the microwave for 5 min instead of waiting forever for it to cook in the oven - still turned out great.

Super yummy! I added some quinoa with the beans. The only thing is that the whole potato was hard to lift once the egg was cooked. The skin stuck to the baking sheet.

This dish is delicious! I used garlic salsa and I added steamed asparagus. I omitted the cilantro, cheese and yogurt. The hardest part of the recipe was waiting for the sweet potatoes to bake!

Delish and easy to make. I like that it can be spiced up or down with different salsas and addition of jalapenos, etc.

Pretty awesome, ii didnt use advacado as indont like them. Serverd on a bed of salad leaves, spiniach, toms and cucumber YUMMLY YUMMLY 👍🏼
