I enjoyed it. Modified it a lil' by adding bell pepper and I ended up adding some lemon juice because the salsa I bought didn't have much taste to it

So easy! Made this in 12 minutes for my daughter to take for lunch. I didn't have jarred salsa so I used chopped tomatoes and a little vegetable broth. (and a little salt and pepper). Delish!

This was great. I used dried black beans so it took longer to prep, but it was worth it! I seasoned my beans and rice with Adobo while they were cooking really kicking up the flavor. This recipe is a keeper!
