Added an onion, cooked 3 chicken breasts separate. Put in my instant pot for 22 minutes. This is...a lot of food. Froze half, had a meal a day for like 6 days.

It was pretty good, I used canned corn instead of fresh or frozen. Also I added cheese and sour cream.

Didn't use the rice™ thought
I used this meal as a main course. It was very fulfilling. A great healthy vegetarian meal.

I used white rice and kidney beans, and it was still perfect! good base recipe, you can really do whatever you want with it! :)

wonderful, the ladies at my work loved it, makes enough for quite a few people.
I enjoyed it. Modified it a lil' by adding bell pepper and I ended up adding some lemon juice because the salsa I bought didn't have much taste to it
So easy! Made this in 12 minutes for my daughter to take for lunch. I didn't have jarred salsa so I used chopped tomatoes and a little vegetable broth. (and a little salt and pepper). Delish!

No recipe on Yum for this but i improvised with the ingredients with normal white rice but very nice .
good meal for a late night, used a rice cooker and got everything ready, added chicken for main meal with side of diced lettus
