- cinnamon (/vanilla)

Directions
- Heat apples and cinnamon in a pan using oil spray or water. Remove half or 1/4 of the cooked apples for pancake topping.
- In a separate bowl, beat the eggs and oats together (add a shake of cinnamon or alcohol-free sugar-free vanilla, if you like). Add egg mixture to pan and incorporate with remaining apples.
- Finish the pancake under the grill in the oven at 325 for 6 minutes, or until the top is golden. Top with warm apples.
- Note: sub fruit/grain for 6 oz veggies and the cinnamon/vanilla with salt and spices for an easy and savory frittata.
