Loved the concept but I did switch it up a bit. I roasted my own cherry tomatoes with some olive oil on 375 degrees along with some fresh garlic, when my garlic was roasted I removed it and added fresh mushrooms, yellow squash, zucchini, salt and pepper to the tomatoes and continued to roast in the oven. I cooked chicken (cut in cubes) with juice from a half of lemon, lil chicken broth, parsley, olive oil, salt and pepper. Before chicken was cooked through I removed it from the pan added it to my veggies in the oven to finish cooking. In my pan that had the chicken I added a lil butter once melted I added chopped shallots, cooked until soft, added my roasted garlic stirred until garlic was blended, added the pesto stirred until heated, added the remaining juice from my half of my lemon stirred until well blended, turned off the heat added 1/4 cup of heavy whipping cream, stirred until completely mixed. Took my chicken and veggies out to let rest, rinsed my cooked penne pasta with cool water, drained well. added cooked pasta to a big bowl, added chicken & veggies, added my sauce and tossed. Once plated I added the feta cheese. It was a big hit!

Super easy, super tasty, definitely will make again! I did add chicken and mushrooms. Just sautéed them with garlic and a bit of the tomato juice while noodles boiled : )
