did not work as expected. still very mushy in the middle. but it may be what you get with sweet potatoes. my kids LOVED them and I have two with sensory eating issues so that is saying a LOT!!!

Did not hold together well as the recipe is written. I salvaged it by adding 1/2 cup flour then they held together well

Excellent pancakes, super fluffy. Definitely add the cinnamon and vanilla.

A bit eggy, but a nice variation of pancake that's a bit healthier. I found I didn't need as much syrup/or jam because of the natural sweetness of the sweet potato and nice hint of cinnamon
