This was a hit with my family. I used half of each of a red, yellow, orange, and green bell pepper. I added sweet potatoes, small yellow potatoes, and seasoned with a little bit of Tony's.

Used sausage instead of chicken. Sprayed with oil before baking. Veggies little softer than wanted. Also added small potatoes. I'd give it a 4. easy to fix but not something I'd make often.

I added red potatoes, sweet potatoes, and garlic, and used a whole (small) onion. I ended up roasting for 30 minutes total but it was so good. Next time I would cover it with foil for 15-20 minutes and then uncover it for another 10.

super easy and full of flavor. i marinated the chicken for a couple hours in a simple marinade with olive oil, balsamic and italian seasoning, salt and pepper. then tossed the veggies in the left over marinade before roasting. served with brown rice. will make again for sure.

Loved this!! I made enough to have it for a few meals spread out over a few days but my husband wanted some ha I didn’t have any peppers or zucchini so I added carrots celery and corn so yummy and filling! I also cooked the chicken for about 3 minutes on both sides seasoned with some sage before I put it all in the oven to keep its flavor. I’ll definitely make this again

It was amazing , i will redo this recipe , i roasted first the chicken alone with all the spices and herbs to let the chicken roast well, than i added the veggies and left it for like 10 mins, i served it with boiled pasta with olive oil salt and oregano
