So easy and so delicious! I skipped the bell pepper and added 8 ounces of sliced crimini mushrooms, but kept everything else the same. Great the night I made it, and great for the next few days too. Healthy, simple, yummy.

Healthy, just need a LOT more flavoring- think I'd go with rosemary and garlic salt, more pepper. I skipped paprika, but used turmeric. Should prob have stayed with paprika, too
