  • 1 avocado (medium sized ripe, pitted)
  • 1/2 lemon (juiced + lemon zest to garnish)
  • 2 garlic cloves (to taste, I used 3 and it was super garlicky, but if you are not a big fan of garlic use 1 clove)
  • 1/2 teaspoon kosher salt (or to taste)
  • 1/4 cup fresh basil (probably optional)
  • 2 tablespoons extra virgin olive oil
  • 6 ounces pasta (your choice of, I used 3oz of spelt and 3 oz of Kamut spaghetti)
  • ground black pepper (Freshly, to taste)

I make this all of the time-I also use it as a salad dressing. I am now officially addicted to avocados. I cannot stop it with the avocados thanks to this recipe. Simple and perfect.

I make this all the time. It's easy to throw together and it's great for when I have more avocados than I need for burritos or toast.

this dish was AWESOME! i did add some roasted cherry tomatoes and that made it bit sweeter.... i also added some purple onion to the creamy mixture
