Shooters don't always have to contain alcohol to be fun or delicious, as demonstrated by these fresh and fruity (and kid-friendly) examples. The first layer is made by pureeing pineapple with mint (and a little brown sugar if desired), then this is topped with a strawberry-mint puree. To keep the layers, pour the top puree slowly over the bottom one. Garnish each shot with more mint and serve, bottoms up!
- 200 grams pineapple
- 8 ice cubes
- 8 mint leaves (plus more for decoration)
- brown sugar (to taste)
- 200 grams strawberries
- In a food processor, combine the pineapple, 4 ice cubes, and 4 mint leaves. Puree for 1 minute then add a little water until it reaches the desired consistency. Sweeten with brown sugar to taste. Distribute the mixture evenly in 8 shot glasses.
- Repeat the previous step using the strawberries and the remaining ice cubes and mint. Pour carefully over the pineapple mixture. Do not mix.
- Garnish with mint and serve immediately.
