Chopped Caprese Salad

Packed full of classic Italian and Mediterranean flavors, like tomatoes, basil, and balsamic vinegar, this chopped Caprese salad recipe should be made and eaten often. Simply place fresh diced tomatoes, cubed fresh mozzarella, and chopped fresh basil together in a bowl and mix. Heat the balsamic vinegar in a small saucepan and let simmer until reduced to a syrupy consistency. Add olive oil, salt, and pepper to the tomato mixture and top with the balsamic reduction. This delicious chopped Caprese salad would be great as either a side dish or a main dish!

BLT Chopped Salad

All BLT lovers rejoice – this BLT salad is just as delicious and filling as the iconic sandwich itself, and making it is easy! Chop both butter lettuce and baby arugula as small as you’d like and place in a large salad bowl. Add one pint of quartered cherry tomatoes, one cup sweet corn, and chopped avocado. Top with salt, pepper, olive oil, and lime juice and toss mixture to coat. After everything is well-mixed, fold in crumbled bacon and feta cheese. Add this fantastic and easy meal for your arsenal!

Chopped Winter Squash Salad With Butternut Squash

Salads don’t have to be eaten in the summer! This tasty chopped winter salad with butternut squash, kale, and lemon-y honey dressing may change your mind on salads altogether. Combine massaged and chopped kale, carrots, cooked butternut squash, canned beets, feta cheese, and chopped pecans together in a large salad bowl. To make the dressing, whisk together three tablespoons and equal parts apple cider vinegar, lemon juice, Dijon mustard, and honey. Sprinkle with salt and pepper. To make it, finely chop kale, romaine lettuce, red onion, yellow bell pepper, and grated carrots and radishes. Place ingredients in a large salad bowl and top with slivered almonds. To make the dressing, combine fresh lemon juice, olive oil, minced garlic, salt, black pepper, and fresh cilantro in a food processor. Pulse until dressing is fully emulsified, and pour over salad and toss to combine. This simple salad only takes fifteen minutes or less to throw together and tastes so fresh and nutritious!

Superfood Detox Salad

Loaded with healthy ingredients like blueberries, broccoli, and fresh greens, this superfood detox green salad is as tasty as it is nutritious. In a large salad bowl, combine a bag of pre-washed kale and spinach salad mix, sliced English cucumber, sliced radishes, chopped broccoli, blueberries, sliced grape tomatoes, diced avocado, sliced almonds, and crumbled goat cheese. In a small bowl, mix honey, vanilla extract, and cinnamon. Drain any leftover water from the bowl of apples and add chopped avocado to the bowl.
