Start by preheating the oven to 400 degrees F. Remove frozen pie crust or puff pastry from the freezer and allow it to thaw, and then bake in a pie pan on the center rack for ten to fifteen minutes until golden brown. Set the crust aside to cool and turn down the heat on the oven to 325 degrees F. While the crust is baking, heat butter in a small pan and cook chopped shallot until translucent. Whisk together four large eggs, heavy cream, nutmeg, salt, and a pinch of cayenne pepper. Place the cooked pie shell on a baking sheet and sprinkle in sauteed shallots, grated Gruyere cheese, and defrosted frozen spinach (be sure to wring out and drain water thoroughly). Pour the egg mixture over the top and bake for fifty to fifty-five minutes until the quiche is fully set and a fork inserted in the middle comes out clean.
