Set the crust aside to cool and turn down the heat on the oven to 325 degrees F. While the crust is baking, heat butter in a small pan and cook chopped shallot until translucent. Whisk together four large eggs, heavy cream, nutmeg, salt, and a pinch of cayenne pepper. Place the cooked pie shell on a baking sheet and sprinkle in sauteed shallots, grated Gruyere cheese, and defrosted frozen spinach (be sure to wring out and drain water thoroughly).
