You don't need any difficult-to-find or specialty grocery store items to make most cookies. To make the classic and beloved chocolate chip cookie you need some all-purpose flour, granulated sugar, baking soda, vanilla extract, unsalted butter, and semisweet chocolate chips. For peanut butter cookies, the recipes are nearly identical, except you'll need peanut butter instead of chocolate chips. Both cookies recipes do not require much prep time or cook time.

Cookie Baking 101

Easy cookie recipes are the best. Sure, it's fun to take on a complex recipe, but when you want to make homemade cookies but don't have a ton of time on your hands, speedy recipes are the way to go.

If you do have time, let your butter and eggs sit on the countertop and get to room temperature. As with many baked goods, this is ideal-- the consistency is better when these two ingredients are at room temperature before making the cookie dough.

Nearly all easy cookie recipes contain butter, flour, and sugar. Those are great staples to have on hand if you frequently bake cookies. You might want to have a few types of sugars, including white sugar, brown sugar, and powdered sugar.

You'll start by sifting the dry ingredients in one bowl and the wet ingredients in another. Slowly, you'll mix the dry ingredients into the wet ones. Then, shape into balls with enough dough to create your ideal cookie size-- remember the cookies will spread, so you want to leave a couple of inches of space between each cookie on the baking sheet. It's best to use several baking sheets and not overcrowd one baking sheet. Bake the cookies immediately in a preheated oven. Baking times will vary.

Cookies Tools You'll Need

You'll want to have cookie sheets, a couple of large bowls for mixing, and maybe some parchment paper for easy clean-up (optional). The are several other reasons to use parchment paper when baking anything from fish to vegetables to cookies. When baking cookies, using parchment paper helps prevent the cookies from sticking to the baking sheet and can help the cookies bake more evenly by leaving a tiny bit of space between the baking sheet and the cookie itself.

Wire racks are also helpful for cooling cookies after they come out of the oven. Using a spatula, you can carefully transfer cookies to wire racks, which helps them cool evenly. The air circulation a wire rack provides prevents the cookie from getting overcooked by resting on a hot baking sheet or getting too soggy sitting on a plate. Let cookies thoroughly cool before storing.

Easy Cookie Recipe Variations

As with most recipes, you can tweak the ingredients for specific diets-- gluten-free, low-fat, etc. Keep this in mind, and you’ll rarely need to skip a recipe just because it doesn’t fit your dietary needs. We love creative modifications, like applesauce in place of oil, or egg replacer (which is a mix of plant-based starches, including potato starch, instead of eggs). Sugar Substitutes

There are so many great sugar substitutes you can use in place of the good ol’ regular sugar that your grandma used. There’s honey, stevia, turbinado, coconut sugar, date paste, maple syrup, xylitol, agave and more. Keep in mind all sweeteners do not have the same amount of sweetness, so be sure to use the appropriate amount of sugar substitute, which may not equal the same volume as the original recipes calls for. Butter substitutes

You can use coconut oil instead of butter. This is useful if you're lactose intolerant. For a long time, applesauce has been used as a butter substitute to reduce the fat in baked goods. Keep in mind this creates a slightly drier texture without the fat from the butter.

Room Temperature Butter

We’ve all been there-- we’re making cookies, and the recipe calls for room temperature butter to cream with the sugar. But, per usual, the butter is in the fridge, so we pop it in the microwave on defrost to soften it up, but the cookies never turn out the same as when we use slowly softened the butter to room temperature. Maybe we're picky here, but presentation and texture are just as important as taste in many cases. Adding melted butter to the cookie batter makes for misshapen cookies that are chewier and less fluffy compared to cookies made using room temperature butter. So it’s your choice-- experiment with different kinds of butter to see which cookie texture you prefer.

There are a number of hacks you can use to soften butter without using the microwave: Place the butter on a windowsill in the sun or use a double boiler on low heat. Another favorite hack we've seen all over the web that is truly genius is placing a stick of butter under a hot glass or bowl for a few minutes.
