  • 1 piece fresh galangal (aka galangal root, large)
  • 1 sprig makrut lime leaves (also called Thai lime, for soup)
  • 1 pound whole chicken (3 lb. per chicken, or 1-2 carcasses)
  • 2 garlic cloves (peeled)
  • 1 shallot (large, sliced)
  • 2 Thai chilies (fresh, broken in half, more or less to taste)
  • 1 can straw mushrooms (drained and rinsed, 15 oz. per can)
  • 8 large shrimp (or more depending on size, peeled and deveined)
  • 6 tablespoons fish sauce
  • 6 tablespoons fresh lime juice
  • 3 tablespoons chili paste in soybean oil
  • cilantro sprigs (for garnish, optional)
  • 3 makrut lime leaves (also called Thai lime, for garnish, more as desired)

    Awesome pawsome! Made it with a little more heat and added some coconut milk at the end maybe 1/4-1/3 cup
