  • 1 Spanish onion

  • 1 Honeycrisp apple (or Fuji)
  • 3 tablespoons extra virgin olive oil (for apple mixture)

  • 1 cup apple cider
  • 3 cups chicken stock (or vegetable stock, use more or less as needed)
