Sweet Lemon, Basil, & Mascarpone Pancakes
Do you want to impress your friends or family with an out of the ordinary breakfast? I recently planted an herb garden and had an abundance of basil so I decided to use it for breakfast. I also happened to have mascarpone cheese in the fridge. Why not join two yummy and interesting ingredients into a wonderful breakfast? Who would have thought that basil would be so perfect for breakfast? My husband and kids ate these up in no time. My daughter ate the pancakes without anything on them. These pancakes are sweet and moist with a hint of lemon and basil. If you are a lemon lover, kick up the lemon by squeezing the whole lemon instead of half.
Try this recipe with your kids. Your child can help with these pancakes by adding and measuring the ingredients, helping you add the basil (they can tear up the leaves) and squeezing the lemon (I would do this in a separate bowl to avoid the pits!).
