First, you'll need a nice, small sugar pumpkin (also known as sugar pie pumpkins, or pumpkin pie pumpkins). Other types of small pumpkins work okay too, but you generally want a pumpkin that is small and heavy for its size, as these are naturally sweeter & fleshier than the kinds of pumpkins you carve up for Halloween.
