Banana Bars

1/2 cup butter (or margarine, softened)

1 1/2 cups sugar

large eggs

1 cup light sour cream

1 tsp vanilla extract

2 cups all-purpose flour

1 tsp baking soda

1/4 tsp salt

mashed bananas (ripe, 1 cup)

Cream Cheese Frosting

8 ozs light cream cheese

1/2 cup butter (or margarine, softened)

2 tsps vanilla extract

4 cups confectioners sugar


  1. Preheat your oven to 350 degrees Fahrenheit.
  2. Combine flour, baking soda, and salt together in a bowl and set aside.
  3. In a mixing bowl, cream butter and sugar together. Once it's light and fluffy, add the eggs, sour cream, and vanilla.
  4. Gradually mix your dry ingredients into your wet mixture.
  5. Mix in your mashed bananas.
  6. Spread your mixture into a greased 10x15 inch pan and pop it into the oven for 20-25 minutes.
  7. Meanwhile, for the frosting, beat together your cream cheese, butter, and vanilla. Add confectioner's sugar in portions and mix until you've achieved your desired consistency.
  8. Once your banana bars are cooled, frost your bars and enjoy!
