School hasn't started yet for my kiddos and yet figuring out the new morning routine feels like a black cloud hanging over my head. If your family is anything like mine, weekday mornings can be an absolute scramble. We race to get dressed and brush teeth. We make sure lunch is packed and backpacks are waiting at the door. We talk about what’s in store for the day. And of course, we eat what’s often called the most important meal of the day: breakfast.

My main priority is to feed the kids something that will provide the energy they need to make it until lunchtime. I work under the assumption that I have about five minutes to plan and serve breakfast in order to make sure that they have time to eat leisurely. Getting a nutritious breakfast on the table in just minutes with all of the other moving pieces that happen on hectic school day mornings can feel like a really tall order sometimes. Our morning engine runs a lot more smoothly when we follow these three guidelines:

  1. Get kids involved with meal planning. Guide and empower them toward healthful, realistic options and in the process, you'll restore morning sanity for everyone.
  2. Prep what you can ahead of time. Cut and wash fruit and vegetables. Refrigerate a batch of pancake batter in advance. Small steps make a big difference when you're short on time.
  3. Make kids comfortable in the kitchen. With simple recipes, kids of all ages can lend a hand. Set up the kitchen to make breakfast foods accessible so they can help themselves.

My 3 year old son is wild for these. I make them ahead of time and store them in a container in the fridge. He usually eats a banana and/or has a yogurt alongside two of these stuffed dates.

The batter for these pancakes takes just minutes to mix together. When it sits overnight in your refrigerator, pancakes come out fluffy the next morning. Yogurt and oats provide protein and fiber and this recipe uses flax meal and water to replace egg. There is no added sugar whatsoever in these. The batter can stay fresh in your fridge for three days.
