  • 3 12 lbs lamb (deboned and cut in 1 inch pieces)
  • 4 tbsps olive oil
  • 2 onions (peeled and cut into medium dice)
  • 2 garlic cloves (peeled and sliced)
  • 4 carrots (peeled and sliced on the bias)
  • 3 bay leaves
  • 14 cup dried oregano (crushed)
  • 2 tbsps black pepper (freshly ground)
  • 4 potatoes (peeled cut into medium dice)
  • 2 tbsps red wine vinegar
  • 12 cup lemon juice
  • 1 qt strained yogurt (reserve 4 ounces for garnish)
  • 3 qts water
  • salt
  • pepper
  • pita bread (optional)
