Ingredients

  • 2 Tbsp. Promise® Buttery Spread
  • 5 large carrots, finely chopped (about 2 cups)
  • 1 large zucchini, finely chopped (about 2 cups)
  • 1 large red or orange bell pepper, finely chopped (about 1-3/4 cups)
  • 1 medium onion, finely chopped
  • 8 ounces white or crimini mushrooms, chopped 
  • 1/2 lb. lean ground sirloin
  • 1/2 tsp. salt
  • 1 can (28 oz.) crushed tomatoes in thick puree
  • 1 can (14.5 oz) fat free reduced sodium beef broth
  • 1 lb. whole grain penne pasta, cooked and drained

Preparation

  1. Melt Promise® Buttery Spread in large saucepot over medium-high heat and cook carrots, zucchini, red pepper, onion and mushrooms 8 minutes or until tender and just beginning to brown. Stir in ground sirloin and salt and brown, stirring occasionally. Add tomatoes and broth. Bring to a boil over high heat. Reduce heat to low and simmer 30 minutes. Serve over hot penne.
