Ingredients

  • 3 tbsps finely chopped onion
  • 1 garlic cloves (small, minced)
  • 3/4 tsp hot red pepper flakes (dried)
  • 1 tsp vegetable oil
  • 3 tbsps water
  • 1 tbsp creamy peanut butter
  • 1 tbsp hoisin sauce
  • 1 tsp tomato paste
  • 3/4 tsp sugar
  • 1 oz bean threads (cellophane noodles)
  • 1 tbsp seasoned rice wine vinegar
  • 4 rice paper (8-inch, rounds, plus additional in case some tear)
  • 2 lettuce leaves (red-leaf, ribs cut out and discarded and leaves halved)
  • 1/4 cup fresh mint
  • 1/4 cup fresh basil leaves (preferably Thai)
  • 1/2 cup napa cabbage (thinly sliced)
  • 1/4 cup coriander leaf (fresh)
  • 1/3 cup shredded carrots (coarsely, 1 medium)
