I like Indian food and am always excited to try dishes at home that remind me of dishes that I eat in restaurants. I love vegetable masala and couldn't wait to try this recipe. I made the recipe as shown except I tweaked it a little to match my preferences. First, I don't like to cook veggies in the microwave so I cooked then in the skillet for about 1/2 hour on low medium heat after adding about 1/4 cup of chicken stock to the spice/veggie mix. This accomplished two things, my vegetables were all cooked through and I had a masala sauce. Second, I used canned, diced tomatoes. These two variations from the original recipe worked well and my family and I all enjoyed the recipe. I will make it again. I have a mother in law who loves Indian food so the next time she comes to dinner I will be serving this recipe. Thanks!
