  • 4 ozs pancetta (diced)
  • 2 cups yellow onion (coarsely chopped)
  • 1 tbsp minced garlic
  • 1 tbsp fresh thyme (minced)

  • 1/4 tsp black ground pepper (freshly)
  • 4 bone in (double-cut veal loin chops, 12 to 14 ounces each)
  • 2 tsps essence (recipe follows)
  • 2 tbsps vegetable oil
  • 11/2 tbsps unsalted butter
  • 1/3 cup shallots (minced)
  • 1/2 cup dry red wine
  • 11/2 cups veal stock
  • 1 tbsp fresh parsley leaves (chopped)
  • 1 cup water
  • 1 cup orange juice
  • 1/2 onion (chopped)
  • 1 bunch asparagus (about 16 spears, trimmed)
  • 21/2 tbsps paprika
  • 2 tbsps salt
  • 2 tbsps garlic powder
  • 1 tbsp black pepper
  • 1 tbsp onion powder
  • 1 tbsp cayenne pepper
  • 1 tbsp dried oregano
  • 1 tbsp dried thyme
