Ingredients

  • 12 cup soy sauce
  • 12 cup fresh lime juice
  • 2 tbsps nam pla (Thai fish sauce)
  • 3 cloves garlic (crushed)
  • 2 chiles (fresh red Thai, thinly sliced)
  • 1 tbsp sugar
  • 2 lbs chicken (mini drumsticks from chicken wings or chicken wings, separated at the joint)
  • 1 mango (ripe, cut into 1-inch slices)
  • 2 tsps salt

  • 12 cup cornstarch
  • 12 cup rice flour
  • 14 cup mint leaves (chopped fresh)
