Ingredients

  • 14 ozs firm tofu (sliced crosswise into 6 rectangles)
  • 3 tbsps peeled fresh ginger (finely grated)
  • 1/4 cup soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sugar
  • 2 tsps cornstarch
  • 2 tbsps vegetable oil
  • 8 ozs shiitake (fresh, stemmed and caps sliced 14 inch thick about 4 cups)
  • 11/2 bunches watercress (stemmed about 6 cups)
